What is a Beef Roast?
A beef roast is a large cut of beef that is usually cooked either by simmering in braising liquid like beef stock, beef broth, water, or red wine (pot roast) or roasting dry (roast beef) slowly in the oven, in an instant pot, in a slow cooker, or just in a large pot. A good beef roast can be made with any cut of beef roast: chuck roast, round roast, or briskets. This includes rump roast, blade roast, shoulder roast, boneless chuck roast; it's not just one specific cut of meat.

How long does raw pot roast last in the fridge?
Raw pot roast that has not been cooked will last for 3 to 4 days in the refrigerator if left at 40 degrees Fahrenheit or below and used before the "use by" date on the pot roast package.
Unopened beef roast should be kept in its original store packaging to maximize the shelf life, do not open the package until ready to use.
To keep pot roast from developing an off flavor while stored in your refrigerator, make sure it is placed at the back of a shelf or near the bottom so that odours do not come into contact with pot roast.
How long does raw roast beef last in the freezer?
You can extend the life of an uncooked beef roast drastically by freezing it.
You can maximize the shelf life of beef roast in the freezer by keeping it in the original store packaging and wrapping it over with airtight heavy-duty aluminum foil, plastic wrap, or freezer paper. Your best bet is to place the unopened package inside a heavy-duty freezer bag in order to prevent freezer burn.
Frozen pot roasts can last for 6 months beyond their quality 'best by' date before being discarded if kept in a regular freezer or up to 1 year in a deep freezer. These times are for best quality only – beef that has been kept constantly frozen at 0°F or lower will be safe to eat for a long period of time, if not indefinitely.

How to tell if chuck roast is bad?

Fresh pot roast is deep red in colour; when exposed to air, pot roast will turn a dull greyish pink. If the meat starts to feel slimy, it could be off as well. Mould growth on a roast should be a pretty clear sign not to eat it.
